A quick, easy dessert and great in the hot weather. Can also be made without the crust and served as "ice cream".
2 1/2 cups graham crumbs 1/4 cup sugar 1/3 cup melted margarine / butter 1 1/2 cups frozen berries (or other fruit) thawed, juice included 3 to 4 unbeaten egg whites 1 cup sugar 2 Tbsp lemon juice 1 cup whipping cream, whipped
Make a graham crust by combining graham crumbs, sugar and melted butter. Spread into bottom of 9x13 pan. Do not bake. In a large bowl of electric mixer, place frozen fruit with juice. Add unbeaten egg whites, sugar and lemon juice. Beat on high speed for approximately 8 minutes. Fold in whipped cream. Pour mixture over crust and freeze.
Only needs a few minutes to thaw enough to cut and serve.
